Okroshka is a classic slavic cold soup consisting of chopped vegetables, cooked meats, and potatoes in a base of kvass (a fermented wheat drink) or kefir. The meat used in okroshka can be either ham, or doktorskaya kolbasa (bologna-style sausage). Okroshka is extremely popular during the summer, because it is always served cold as a refreshment.

Okroshka is a traditional cold soup made mainly in eastern Ukraine. The origin of okroshka is an open question, because no reliable historical evidence on this subject has survived to the date. However, most historians associate the appearance of okroshka with the baptism of Kievan Rus.
